Cozy Hot Chocolate Mix

*adapted from Smitten Kitchen*

Yield: About 1 3/4 cups mix; makes 9 cups officially, but I find that we get more because it is so rich

Ingredients:

  • 1/2 cup (100 grams) granulated sugar
  • 1 tablespoon (8 grams) cornstarch
  • 3 ounces (85 grams) semi- or bittersweet chocolate, roughly chopped
  • 1/2 cup (40 grams) cocoa powder
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt

A few notes on making this:

  • Growing up, I used to always make the hot chocolate recipe on the back of the Hershey’s cocoa box. I find that this is even richer and more delicious, and the best part is the mix last all winter and can be made one cup at a time. You’ll never buy packaged hot chocolate mix again.
  • You could easily make this to package up as gifts instead of a cookie box or along with one.
  • generally, we mix this with milk at our house, but you could use water if you didn’t have any milk on hand. I also like to put a teaspoon in my espresso and froth it.
  • The recipe calls for mixing 3 tablespoons of the mix with one cup of milk, but it’s very rich. I generally do 2 Tbsp for every 8oz of milk instead.

Directions:

  • Combine all ingredients in a food processor and blend until powdery.
  • Alternatively, chop or grate the chocolate until it is as fine as you can get it, and stir it into the remaining ingredients. Mixture keeps in an airtight container at room temperature for up to 2 months.

To make:

  • Heat one cup (8oz) of milk in a saucepan over medium heat until steamy.
  • Add 2 tablespoons hot cocoa mix, 3 if you prefer it richer.
  • Whisk over heat for another minute or two, until it begins to simmer and mix is completely dissolved.
  • Pour into mug, top with mini-marshmallows or whipped cream and enjoy!
